Healthy Chicken Burger Recipe

Ingredients:

·         ½ kg Chicken Breast pieces
·         1 cup chicken fat
·         Half cup mayonnaise or cream or one egg
·         Garam masala powder to taste
·         Salt to taste
·         1 tsp chopped garlic
·         2 tsp lime juice
·         Half cup chopped fresh coriander leaves
·         Black pepper powder to taste
·         1 tsp Red chili flakes
·         3 burger breads
·         2 tomatoes
·         1 tbsp tomato ketchup/chili sauce
·         One cup bread crumbs

Preparation:

Cut the chicken into small cubes. Add chicken fat to it. If chicken fat is not available, you may add half cup cream to it as well. Put the chicken along with chicken fat into a blender and make fine chicken mince of it. Now add the mayonnaise or cream into it to make the burger juicy. Now add salt, pepper, red chili flacks, garlic, garam masala powder, chopped coriander leaves, and lime juice to it. Mix well and shape it into medium sized burger petties. Coat these petties with bread crumbs and fry them on medium heat into oil or butter. Now take the burger bread, toast them, and make burger using tomato ketchup, salad leaves, tomato slices, and mayonnaise. Delicious and healthy chicken burgers are ready. Enjoy!

Crispy Chicken Cutlets

Ingredients

·         ½ kg grilled chicken
·         One onion, chopped
·         One tsp chopped garlic
·         ½ tsp red chili flakes
·         ¼ cup chopped coriander leaves
·         Salt to taste
·         1 tsp garam masala powder
·         2-3 potatoes
·         3 eggs
·         One cup plain flour
·         One cup bread crumb
·         Oil for frying
Preparation

Take a bowl and put into it chopped onion, garlic, chili flakes, garam masala powder, chopped fresh coriander leaves and salt. Mix all the ingriedients well. Now boil the potatoes and mash them. Add the potatoes to the bowl and mix with other ingredients. Add an egg to the mixture and mix well. Now take the grilled chicken and crush it or chop it into very small pieces. Add the chicken to the mixture and mix well. Add some bread crumbs to it if needed, to achieve the desired consistency of the mixture. Now make the cutlets in any shape you want and the cutlets are ready to be fried. The proper way to coat the chicken cutlets is to dip them first in all purpose flour, then into the beaten egg, and lastly in the bread crumbs. Now fry them into oil. Crispy Chicken Cutlets are ready.

Chicken Masala

Ingredients:

·         1 kg Chicken
·         One cup Olive Oil
·         Two Onions- sliced
·         2 whole Fresh Garlic
·         2 inch piece of Ginger
·         Salt to taste
·         2 tsp Red Chili Powder or to taste
·         2 tsp Coriander Powder
·         2 tsp Cumin Seed Powder
·         1 tsp Turmeric Powder
·         1 tsp Ground Gram Masalah
·         3 tsp Tomato Paste
·         Half cup Chopped Fresh Coriander Leaves
·         6-8 Green Chilies
Preparation:

Take a heavy bottom skillet and pour into it the olive oil. Add the sliced onion to it and put it on medium heat. Let them cook for 3-4 minutes. Don’t let them get brown in colour. Now add a cup of water and cover the skillet. Let it cook on low heat until the onions get tender. Meanwhile peal the ginger and garlic; take them into a blender and mix into it half cup of water. Blend them well. Then remove the cover and add ¼ cup of water to it. Now add chicken, ginger garlic, salt, chili powder, coriander powder, and turmeric powder. Mix all the ingredients well, cover the skillet, and let it cook on medium high heat. Stir it after each 4-5 minutes. When the oil begins to leave the masala, remove the cover and add ground gram masalah and tomato paste to it. Cook it stirring continuously for another two minutes. Now add coriander leaves and green chilies to it and remove from the heat. Serve the Chicken Masala with fresh Naans and Salad. You can also serve it with boiled rice.

Korean Fried Chicken Recipe


Ingredients

·         6 pounds Chicken
·         2 tsp Salt
·         2 tsp Ground black pepper
·         ½ cup Plain Flour
·         1 cup Potato starch powder
·         2 Eggs
·         2 tsp Baking Soda
·         ½ cup Sweet rice flour
·         Canola oil for deep fry
·         8 cloves of Garlic
·         1 ½ cup Ketchup
·         ½ cup Hot pepper paste
·         2 tbsp Vinegar
·         2 tsp Sesame seeds
·         1 ½ cup Rice syrup
Preparation
Wash the chicken chunks and put them into a large bowl. Sprinkle black pepper powder and salt over it and mix well and put it aside for about half an hour. Then add to it the potato starch, plain flour, sweet rice flour, eggs and baking soda. Mix all these ingredients well with chicken chunks. Now heat oil on medium heat and fry the chicken chunks. Fry them until they turn into light brown colour for about ten minutes. Take them out, put them aside for ten minutes and then fry them again. Now take another fry pan and heat 1 ½ tsp oil in it. Add minces garlic cloves to it and cook for about a minute. Now add ketchup, rice syrup, and pepper paste and cook it stirring continuously for a few minutes. Now add vinegar to it and cook it stirring for another minute. Sauce is ready. Add chicken chunks to it and coat the double fried chicken with it. Now remove from heat. Sprinkle sesame seeds onto it and serve.

Chicken Mole Recipe


Ingredients:

·         1 rotisserie chicken
·         I tbsp vegetable oil
·         2 onions, chopped
·         1 tsp minced garlic
·         ½ tsp cumin seed powder
·         1 can green chillies paste
·         1 can diced tomatoes
·         ½ tsp ground cinnamon
·         1 tsp tahini
·         3 oz bittersweet chocolate
·         1 tbsp chopped cilantro
Preparation:
Heat oil in a heavy bottom skillet and add chopped onions to it. Cook for 3-4 minutes on medium heat. Then add garlic to it cook it stirring continuously for one minute. Now add diced tomatoes, green chillies paste, cumin seed powder and ground cinnamon to it. Mix well and simmer for 10-12 minutes. Then add tahini, chopped cilantro, and chocolate. Keep stirring and cook for half a minute. Now remove it from the heat and let it cool at room temperature. Then blend the paste. Take chicken out in a bowl and pour the blended paste onto it. Mix well. The recipe is ready. Enjoy!

Chicken Tandoori


Ingredients:
·         1 kg chicken
·         2 onion
·         Black pepper to taste
Preparation:
            Take a heavy bottom skillet and put the chicken pieces in it. Now roughly chop the onion and put them at all sides of chicken. Cover the skillet and cook at low heat for 10 minutes. Then sprinkle the black pepper powder on the chicken and let it cook for 15 minutes.  If you want it more spicy then add a bit curry powder along with the black pepper powder.Now flip the chicken pieces over and cover the skillet again and let it cook for another 15 minutes. The recipe is ready. Serve it with ketchup and enjoy. This recipe is valuable for the patients of high blood pressure.

Chicken Frankie (Kathi Roll)


Ingredients:
For dough:
·         1 cup all purpose flour
·         ¼ cup flour
·         Salt to taste
·         ½ tsp oil
For filling:
·         3 cups mashed chicken
·         1 tbsp oil
·         1 ½ tsp cumin seeds
·         1 ½ tsp crushed ginger and garlic
·         1 cup chopped onion
·         ½ tsp turmeric
·         Salt to taste
·         1 cup chopped tomatoes
·         ½ cup chopped capsicum
·         Red chili to taste
·         2 tsp coriander powder
·         1 tsp cumin seeds powder
·         1 tsp chaat masala
·         2 lemon, juiced
·         Chopped fresh coriander leaves
·         1 egg
Preparation:
                Mix all purpose flour, flour, salt, oil and some water and make soft dough and keep it aside for 30-40 minutes.  Now heat oil in a heavy bottom skillet and add cumin seeds to it. Cook for half a minute and then add ginger and garlic. Cook for 1-2 minutes and then add chopped onion, salt, and turmeric. Cook it for about 5 minutes or until the onions are slightly brown. Then add tomatoes, capsicum, red chili, coriander powder, and cumin seeds powder.  Cook for 5-6 minutes and then add a little water and chicken. Mix well and cover it for about one minute. Then remove the lid and cook it until all the water evaporates. Now add chaat masala, chopped coriander leaves, and lemon juice to it.
                Now take the dough that you have made earlier. Make a thin sheet of it and coat its one side with a little oil; sprinkle some all purpose flour on it and then fold it and roll it around. Set it aside for about 15 minutes. Then roll out to make a thin sheet again. Then out it on heat and cook it slightly on both sides.  Now coat one side of the paratha with about 1-2 tsp of oil; whisk the egg and pour it on that side of the paratha. Turn this side down and let it cook. Now take this paratha on a plate and spread chicken on it. You may also add some chopped tomatoes, capsicum etc at this stage if you want it juicier. Roll the paratha and serve.

Corn Flour Chicken


Ingredients:
·         ½ kg chicken breast, cut into cubes
·         1 ½ cups corn flour
·         ½ tbsp milk
·         2 eggs
·         3 tsp onion powder
·         2 tsp icing sugar
·         2 cups bread crumbs
·         4 tsp black pepper
·         4 tsp salt
·         4 tbsp butter
·         Sweet onion sauce to serve with
Preparation:
Take a bowl and add flour, salt, pepper, and icing sugar to it and mix all the ingredients. Take another bowl and beat eggs in it and add milk to it and whisk properly. Now in another bowl place the bread crumbs. Now melt the butter in a pan. Take the chicken cubes one by one and first coat them with flour, then dip in the beaten eggs and coat with the bread crumbs. Do this all with all the cubes and then fry them in the melted and heated butter until well cooked. Serve with sweet onion sauce or any other your favorite dipping.

Chicken Parmesan


Ingredients:
·         2 chicken breast pieces
·         2 eggs
·         ½ tsp dried basil
·         1 ½ cup corn flour
·         ¼ cup fresh coriander leaves
·         ½  tsp garlic powder
·         1 cup bread crumbs
·         1/3 cup parmesan
·         Italian blend shredded cheese
·         Salt to taste
·         Black  pepper to taste
(You can also use white pepper)
·         1 cup chili sauce
·         Oil for fry
Preparation:
                Make thin sheets of the chicken breast pieces. Sprinkle salt and pepper over it; flip over it and sprinkle salt and pepper on the other side. Set it aside. Take a bowl and beat eggs in it. Add dried basil and garlic powder to it and mix well. Now in another bowl mix bread crumbs, parmesan and fresh chopped coriander leaves. Now heat oil in a heavy bottom skillet. Now take the breast pieces and first coat with flour and then dip into eggs. Coat again with bread crumbs mixture and place in a plate. Stir fry for 3-4 minutes. Now place all the pieces in the baking tray and place some sauce and shredded cheese on the upper sides of all the pieces.  Preheat oven to 400 degrees and bake for 10 minutes or until the cheese is melted. Now take out from the oven and sprinkle some parmesan and fresh copped coriander leaves over melted cheese. Bake for another ten minutes. Chicken Parmesan is ready. Enjoy!

Chicken Achari (Murgh Achaar)


Ingredients:
·         1 kg boneless chicken, cubed
·         3 large tomatoes, peeled and finely chopped
·         2 tbsp ginger garlic paste
·         2 onion, grated
·         2  cups plain yogurt
·         2 tbsp lemon juice
·         1 tsp sugar
·         1 tsp red chili powder
·         1 tsp fennel seeds
·         Salt to taste
·         1 tsp cumin seeds
·         ½ tsp turmeric
·         5-6 whole cloves
·         1 tsp mustard seeds
·         1 tsp Nigella seeds (kalonji)
·         1 tsp fenugreek seeds
·         7-8 green chilies
·         1 cup water
·         3-4 tbsp oil or ghee
Preparation:
                Put chicken in a bowl and add yogurt, ginger garlic paste, pepper, turmeric, grated onions, and salt to it. Mix well and marinate in refrigerator for 25-35 minutes. Meanwhile roast all seeds for about one minute and whole cloves in a pan and crush gently to make coarse powder. Then heat oil or ghee in a heavy bottom skillet and add chopped tomatoes and marinated chicken to it with all marinade. Stir fry for 15-20 minutes over medium heat. Now add ½ cup water, lemon juice, crushed seeds and sugar and cook for one minute stirring continuously. Cut the green chilies and add them also to the chicken. Cover it tightly and simmer for 5 minutes over low heat. Then add remaining water and cook for a few seconds. Chicken Achari (Murgh Achaar) is ready.

Spicy Fried Chicken Legs


Ingredients:
·         8 chicken legs
·         2 tsp red chili powder
·         1 tsp black pepper powder
·         ¼ tsp turmeric
·         2 tsp ginger garlic paste
·         Salt to taste
·         1 cup flour
·         Oil for stir fry
Preparation:
                Take a bowl and place the ginger garlic paste in it. Add red chili powder, salt, turmeric powder and black powder to it. Mix it well to make a fine paste. Now make small cuts over the chicken legs and coat the pieces with the paste all sides. Set aside at room temperature for 20-25 minutes. Now coat the leg pieces with flour and stir fry. Spicy Fried Chicken Legs are ready.

Chicken Pot Pie Recipe


Ingredients:
·         4 chicken breasts, cut into small pieces
·         3 cups chicken stock
·         4 tbsp butter
·         6 tbsp plain flour
·         2 carrots, chopped
·         1 cup milk
·         2 stalks celery stalks
·         1 onion, chopped
·         ½ cup peas
·         ½ tsp dried parsley
·         1 tsp thyme
·         1 tsp salt
·         ½ tsp black pepper
·         1 cup grated cheddar cheese
·         Pie shells
Preparation:
            Take the chicken in a skillet and add chicken stock to it. Simmer for 20-30 minutes over low heat and then remove from heat. Drain the chicken pieces and set aside. Now melt the butter in a pan and add chopped onion, celery, and carrots and cook for 5 minutes. Add peas and cook for 6-8 minutes. Then add flour to it and cook for 1-2 minutes. Add the grated cheese and milk and cook it stirring until it is well mixed. Add the cooked chicken, parsley, thyme, salt, and black pepper. Cook it stirring until the right consistency (about 5 minutes). Now remove it from heat and place it between the pie shells.  Press the pie edges together and make small cuts on the top crust so that the moisture may evaporate easily. Bush the beaten egg white over top pie shell. Preheat the oven to 400 degrees. Place a foil over baking tray and put the pie over it. Cover the pie and bake in oven for 30 minutes. Now remove the cover and bake for another 20 minutes. Chicken pie is ready.

Southern Fried Chicken Breast


Ingredients:
·         3 breast pieces
·         2 cups cold water
·         1 tbsp salt
·         1 tbsp honey
·         1 tbsp white vinegar
·         1 cup flour
·         ½ tsp salt
·         ½ tsp black pepper
·         ½ tsp paprika
·         ½ tsp cayenne
·         Vegetable oil for fry
Preparation:
Take a pot with a tight lid and pour water in it. Add salt and honey in the water and stir very well to mix thoroughly. Then place the chicken breast pieces in the pot and tightly cover the pot. Refrigerate it for 1 ½ hours. Then drain the chicken and dry it. Pour in the vinegar and mix well with chicken pieces. Set aside for 15 minutes. Meanwhile take a bowl and put the flour in it. Add salt, paprika, black pepper and cayenne to it. Mix well and then coat the chicken breast pieces with it. Make sure that all the sides of chicken pieces are well coated. Now let it rest for 15 minutes at room temperature. Then heat the oil in a pan over high heat and fry the chicken breast pieces. Once one side gets nice brown colour then flip the pieces over and let the other side fry.
