Chicken Parmesan


Ingredients:
·         2 chicken breast pieces
·         2 eggs
·         ½ tsp dried basil
·         1 ½ cup corn flour
·         ¼ cup fresh coriander leaves
·         ½  tsp garlic powder
·         1 cup bread crumbs
·         1/3 cup parmesan
·         Italian blend shredded cheese
·         Salt to taste
·         Black  pepper to taste
(You can also use white pepper)
·         1 cup chili sauce
·         Oil for fry
Preparation:
                Make thin sheets of the chicken breast pieces. Sprinkle salt and pepper over it; flip over it and sprinkle salt and pepper on the other side. Set it aside. Take a bowl and beat eggs in it. Add dried basil and garlic powder to it and mix well. Now in another bowl mix bread crumbs, parmesan and fresh chopped coriander leaves. Now heat oil in a heavy bottom skillet. Now take the breast pieces and first coat with flour and then dip into eggs. Coat again with bread crumbs mixture and place in a plate. Stir fry for 3-4 minutes. Now place all the pieces in the baking tray and place some sauce and shredded cheese on the upper sides of all the pieces.  Preheat oven to 400 degrees and bake for 10 minutes or until the cheese is melted. Now take out from the oven and sprinkle some parmesan and fresh copped coriander leaves over melted cheese. Bake for another ten minutes. Chicken Parmesan is ready. Enjoy!
