Tamarind Chutney


Ingredients:
·         2 cups seedless tamarind
·         1 tsp salt
·         1 tsp black salt
·         2 ½ cup sugar powder or to taste
·         1 tsp ginger powder
·         1 ½ tsp roasted ground cumin seeds
·         1 ½ tsp black pepper powder
·         1 ½  tsp red chili powder
(Adjust it according to the sourness of tamarind)
Preparation:
            Place the tamarind in a bowl and pour onto it about 2 cups boiling water. Soak for about 45 minutes. Then mash it well and stain it in another bowl.  Now in this pulp add sugar, salt, cumin seeds powder, black salt, red chili powder, black pepper powder, and ginger powder. Mix well and adjust the red chili and sugar according to the sourness of the tamarind. Tamarind chutney is ready.

Mixed Raita

Ingredients:
·         2 cups yogurt
·         1 potato
·         1 onion
·         4-5 green chilies
·         2 tomatoes
·         1 cucumber
·         ½ tbsp chopped fresh coriander leaves
·         A few mint leaves (optional)
·         Black pepper to taste
·         Salt to taste
Preparation:
                Boil the potato and peel it. Chop the potato, onion, green chilies, tomatoes, and cucumber. Beat the yogurt in a bowl and add all the chopped ingredients to it. Add salt and pepper also and mix well. Mixed Raita is ready. 

Potato Raita


Ingredients:
·         3 cups curd
·         3 potatoes
·         1 tsp roasted cumin seed powder
·         ½ cup chopped fresh coriander leaves
·         Black pepper to taste
·         Red chili powder to taste
·         Salt to taste
Preparation:
            Beat the curd in a bowl. Boil the potatoes and peel them. Cut the potatoes in small pieces and add them in the beaten curd. Add all other ingredients and mix well. In the end garnish it and serve with food.

Coconut Chutni


Ingredients:
·         1 Fresh coconut, grated
·         ½ tbsp Oil
·         2 tsp urad wash
·         1 tbsp cashew nuts
·         ½ tbsp roasted channa daal
·         ½ tbsp fresh coriander leaves
·         1 tsp chopped ginger
·         2 tsp cumin seeds
·         1 tsp mustard seeds
·         Few curry leaves
·         3-4 green chili, chopped
·         3-4 Whole red chilies
·         Salt to taste
·         ½ tbsp tamarind
·         1 ½ cup water
Preparation:
                Put grated coconut in the blender and add cashew nuts, roasted chana daal, fresh coriander leaves, chopped ginger, one tsp cumin seeds, green chili, tamarind, salt and water to it. Blend well to make a fine paste and set aside. Now heat oil in a pan and add mustard seeds, remaining cumin seeds, whole red chili, urad wash, and curry leaves. Sauté for 1-2 minutes and then add it to the chutni. Mix well. Coconut Chutni is ready.

Raw Mango Chutni


Ingredients:
·         2 raw mangoes
·         ½ cup mint leaves
·         3 cup fresh coriander leaves
·         1 tsp roasted cumin seeds
·         5-10 green chilies
·         1 tsp kala namak
·         2 tsp ginger paste
·         Salt to taste
·        ½ tsp Black pepper
Preparation:
                Peel the mangoes and separate the pulp. Cut it into pieces and put in the blender. Add all the ingredients and make a very fine paste of all the ingredients.  Raw Mango Chutni is ready.
