Lemon and Ginger Cheese Cake

Ingredients:
·         2 tbsp ground ginger
·         125 g margarine
·         225 g graham cracker crumbs
·         2 tbsp caster sugar
·         Grated Lemon Peel
Filling:
·         1 tbsp cornflour
·         380 ml sour cream
·         180 g caster sugar
·         570 g cream cheese
·         Grated zest of unwaxed lemon
·         4 large eggs beaten
Topping:
·         2 ½ tbsp caster sugar
·         80 g stem ginger, in syrup, drained and finely chopped
·         250 ml sour cream
Making:
Preheat the oven to 180C (350F). Mix graham cracker crumb, sugar, ground ginger, margarine and grated lemon peel. Blend these all ingredients. Cover the outside of the cake tin with a double layer of foil, moulding it to the tin, but being careful not to puncture it so it remains watertight. Now place the mixture into the tin and press down to form an even layer I the base of the tin. Bake in the oven for about 12 minutes. Then let it cool.
Filling:
To make the filling, put the cream cheese and sugar in a large bowl and beat until smooth. Beat in the cornflour, followed by the eggs in about 4 batches. When smooth, beat in the lemon zest and sour cream. Pour the mixture over the crumb base. Set the cake tin in the roasting tin and pour very hot water into the roasting tin to come just over half-way up the sides of the cake tin.
Transfer the tins to the oven and bake, at the same temperature, for 45-50 minutes or until the cheesecake is just set in the centre.
Topping:
To make the topping, put the sour cream and 2 tablespoons of the sugar in a bowl and mix well. Remove the cheesecake from the oven and spread the sour cream mixture over the surface. Sprinkle the chopped ginger evenly over the top, and then return to the oven for 10 minutes. Remove the cheesecake from its water bath, let cool on a wire rack, then chill, preferably overnight, before removing the foil and unmolding the cheesecake. Toss the lemon zest with the remaining sugar, sprinkle over the cheesecake just before serving. Lemon and Ginger Cheese Cake is ready. Enjoy!

How to Make Cake in a Mug

When your sweet cravings kick in but you don't have time to bake something tasty and warm, here's an excellent recipe to make a simple, quick and easy chocolate cake. It's a great cooking lesson for kids, and a different way to use hot chocolate mix any time of the year. Share this recipe with everyone and use this as a "friendly" treat for friends.
Ingredients:
Recipe 1 - Hot Cocoa Chocolate Cake
  • 9 Tbsp. hot chocolate powder mix
    • look for sugar-free, calcium fortified mix for a healthier cake
  • 4 Tbsp. self raising flour
    • use whole wheat flour for a healthier alternative
  • 1 egg
  • 3 Tbsp. oil
    • for a healthier recipe, use canola oil
Recipe 2- Chocolate Cake
  • 4 Tbsp. cake flour
    • if you don't have cake flour, sift 1 cup (125g) all-purpose flour and 2 Tbsp cornstarch
    • other kinds of flour will work as well, but the cake will be heavier
  • 4 Tbsp. granulated sugar
  • 2 Tbsp. cocoa
  • 1 egg
  • 3 Tbsp. milk (any kind)
  • 3 Tbsp. oil (any kind but peanut)
  • splash in a little vanilla
Recipe 3 - Honey bun coffee cake
  • 1/3 cup (75g) yellow cake mix
  • 1 egg white
  • 2 Tsp. vegetable oil
  • 1 Tbsp. water
  • topping mix (optional)
    • 2 Tsp. brown sugar
    • 1 Tsp. finely chopped pecans
    • 1/4 Tsp. cinnamon
Steps
1.     Grease the inside of the mug with cooking spray.

2.     Measure and pour the dry ingredients into the mug. Stir ingredients with a spoon.

3.     Crack the egg and add it to the mug. Stir well to get the egg incorporated in the dry ingredients.

4.     Measure and pour the wet ingredients into the mug.
5.     Stir and beat everything together to get a "cake batter" mix. Use your spoon to scrape the bottom. Fold the bottom mixture onto the top a few times to get all of the dry ingredients (chocolate powder and flour) moistened and incorporated with the wet ingredients (water, egg, and oil).

6.     Microwave on high for 3 minutes. Timing may be different for various watt amounts.

7.     Watch as the cake starts to rise while in the microwave.

8.     Use a potholder or oven mitt to remove the mug from the microwave.
9.     Remove the cake from the mug. Take a fork and cut the cake into 4 pieces (quarters). Cutting the cake will help it cool down faster.

10. Garnish the cake with ice cream, whipped cream, glaze, syrup, or another topping of your choice.
Tips
  • For an extra treat, add a few mini marshmallows (you can learn how to make marshmallows from scratch!) or chocolate chips before you put the mug into the microwave. If you're using marshmallows, be sure to "protect" your microwave tray by lining the bottom with paper towels.
  • After the mug has cooled down, soak it in water to loosen and remove cake residue. It will be harder to clean it if not taken care of or tossed into the dishwasher "as is". Be sure the mug has cooled down.  A hot ceramic mug may crack violently if placed in cool water.
  • For a more uniform baking double the time, add 35 seconds and set your microwave to half power.
  • Just before you put all ingredients inside the cup, first brush the inside of cup with little butter or oil. This will help in removal of cake smoothly and with fine texture. Also always use little bigger cup then normal and can add 1/2 table spoon of sodium bi-carbonate in the mixture for getting a more spongy and fluffy cake. You can also add 1 table spoon of vanilla essence or some raisins in the mixture for getting a sweet aromatic flavor.
Warnings
  • When you remove the cake from the mug, the bottom may still be in a liquid form. This is okay, and if you wish to, place the cake back in the microwave for a longer time.
  • Never use a cracked or chipped mug in the microwave, or handmade stoneware one, or one with gilding or other metallic decoration; mugs with these characteristics can break or cause arcing or sparking in the microwave and should be avoided. Also, do not use handmade ceramics unless you know that the clay body it was made from does not contain iron, as microwaves will weaken and eventually break the mug.
  • It is best to set the mug on a microwave=safe plate, as the mixture seems to love to boil over like a volcano.
