Beef and Vegetable Soup

Ingredients:
·         1 cup oil
·         1 ½  cup diced beef
·         1 onion, diced
·         ½ cup macaronis
·         2 medium sized potatoes, cut into cubes
·         1 cup chopped carrots
·         ½ cup chopped pumpkin
·         3-4 green chilies, chopped
·         3-4 fresh tomatoes, chopped
·         1 cup tomato sauce
·         1 tbsp chopped cilantro
·         2 capsicum, chopped
·         Black pepper to taste
·         Salt to taste
·         10-15 cups water
Preparation:
            Heat oil in a heavy bottom skillet and add chopped onion to it and cook for 3-4 minutes. (don’t brown) Now add the beef to it and cook for 8-10 minutes over medium low heat. Add potatoes, carrots and pumpkin to it. Add 7-8 cups of water; cover and cook for 30 minutes over medium heat. Then add remaining water, macaronis, chopped capsicum, tomato paste and tomato sauce to it. Add green chilies, black pepper and salt also. Mix well; cover it and cook for another 30 minutes. In the end add cilantro. Beef and Vegetable Soup is ready.

Easy Baked Fish


Ingredients:
·         ½ kg fish
·         1 tsp black pepper
·         Salt to taste
·         1 tbsp mayonnaise
·         ½ tbsp lemon juice
·         ½ cup bread crumbs
·         1 tbsp melted butter
·         1 tsp garlic paste
Preparation:
Cut the fish into large pieces and rub the garlic paste over the fish and set it aside for 10-15minutes. Now take a bowl with mayonnaise in it and add salt, black pepper, and lemon juice to it. Mix well and pour the mixture over the fish pieces placed in the baking tray. Top the pieces with bread crumbs and melted butter. Bake the fish for 20-25 minutes on 400°. Easy Baked Fish is ready. Enjoy!

Baked Oatmeal Recipe

Ingredients:
·         2 cups old fashion oats
·         1 cup milk
·         ½ tsp baking powder
·         2 eggs
·         ¼ tsp baking soda
·         ¼ tsp salt
·         1 tsp allspice
·         2 ½ cups sliced fruit
·         ¼ cup honey or sugar
·         ½ tsp cinnamon powder
Preparation:
        Preheat oven to 350F. Spray nonstick spray on a 8x8 baking dish. Mix dry ingredients and then mix in wet ingredients. Spoon into pan and cover with foil. Bake for 20 minutes, remove foil, and bake for another 25 minutes until golden brown. Baked Oatmeal Recipe is ready.

Shrimp Winter Soup


Ingredients:
·         5 shrimps
·         10 cups chicken stock
·         2 cups chopped mushrooms
·         ¼ cup lemon grass (dried or fresh)
·         1 tbsp honey
·         ¼ cup red chilies, chopped
·         1 tsp grated ginger
·         1 tbsp lemon juice
·         ½ cup fresh coriander leaves, chopped
·         ¼ cup green chopped chilies
·         2 lemons
·         Salt to taste
Preparation:
            Take a heavy bottom skillet and pour into it the chicken stock. Then add to it shrimps, mushrooms, lemongrass, honey, chopped red chilies, grated ginger, lemon juice, chopped green chilies, and salt. Cover the skillet and let it cook for 10-15 minutes at low heat. Then add fresh coriander leaves and take out in serving bowl. Add thinly sliced lemons in the bowl. Shrimp Winter Soup is ready.

Best Winter Soup


Ingredients:
·         1 cup boneless chicken, cut into small pieces
·         1 cup chopped carrots
·         ½ cup chopped cabbage
·         1 cup onions, chopped
·         ½ cup peas
·         4 cups chicken stock
·         4 cups water
·         Black pepper to taste
·         Salt to taste
·         2 cloves garlic
·         2 green peppers, chopped
Preparation:
                Add all the ingredients in a heavy bottom skillet; cover it tightly and simmer at very low heat for 7-8 hours. Better you start it at night so to avoid waiting. Then remove the cover and pour out in the serving bowls. Delicious winter soup is ready. Enjoy!

Roasted Salted Almonds


Ingredients:
·         2 cups almonds
·         4 tbsp olive oil
·         2 tbsp butter
·         ¼ tsp red chili powder
·         ¼ tsp salt
·         ¼ tsp black pepper
Preparation:
        Take a skillet and boil some water in it. When it starts boiling add almonds and boil for 3-5 minutes. Mean while heat olive oil in a pan and add butter in it. Drain the almonds and put them in the pan into heated olive oil and butter. Roast the almonds for about 5 minutes. Meanwhile take a bowl and add salt, chili powder and black powder in it. You can use any other spices of your own choice. When the almonds are roasted put them in this bowl. Mix well. The leftover olive oil and butter may be used for any other purpose. The tasty Roasted Salted Almonds are ready.

Panjeeri

 Ingredients:
·         2 cups ghee
·         2 tbsp almond and pistachio, grated
·         1 ½ cup semolina
·         1 cup sugar
·         ½ cup fox nut (makhaney)
·         ½ tsp caedamom powder
·         ½ cup edible gum (gond)
·         1 tsp dry dates (chuharay), grated
·         ¼ tsp nutmeg (jaifal)
·         ½ tbsp grated coconut
Preparation:
        Heat ghee in a pan and fry gum in it. When it’s fried, take it out and grind/crush it properly. Now fry fox nuts in the same ghee and when done keep aside. In the same ghee properly fry semolina. When semolina is done remove from the stove. Now mix ground gum, sugar, fox nuts, cardamom powder and all other ingredients. Mix well all the ingredients.  You can also add some more nuts of your choice like peanuts, cashew nuts etc. It can be molded in any shape like round balls, bars or plane sheets. Panjiri is ready. Serve with tea or alone.

Semolina Halwa (Suji Halwa)


Ingredients:
·         1 cup sooji (semolina)
·         1 cup sugar
·         2 ½ cup water
·         2 tsp ghee
·         3-4 cardamom, powdered
·         Pinch of salt
·         ½ tbsp grated almonds
·         ½ cup butter
·         ¼ tbsp raisins
·         ¼ tbsp cashew nuts
Preparation:
            Take a pot and melt butter over medium low heat. Add nuts, cardamom and raisins. Cook for about two minutes and add semolina (sooji). Mix well and cook on low flame. When the semolina slightly changes its color to light brown then first add sugar and then water. Sprinkle salt and cook to your desired consistency. When all the water is absorbed cover the pot and simmer for about 5 minutes. semolina halwa is ready. Serve and enjoy.
