Chinese chicken stock


Ingredients:
  • 3 pounds chicken pieces (backs, necks, or wings)
  • 10 cups cold water
  • 3 slices fresh ginger
  • 10 Garlic Cloves crushed
  • 2 green onions, cut into pieces
  • 1 tbsp Chinese rice wine or dry sherry
  • Black pepper, to taste
  • Salt to taste
Preparation:
                Rinse the chicken pieces under running water. Place in a large pot with 10 cups water (or enough to cover). Then add the ginger, garlic, green onion, rice wine or sherry. Bring to a boil over medium heat, occasionally skimming off the foam that rises to the top. Add salt to taste and black pepper. Cover, reduce the heat and simmer at very low heat for 2 hours. Remove stock from heat, strain through muslin and store in refrigerator for up to 3 days or in freezer for 2–3 months. Use it as called for in recipes.

Chinese Orange Chicken


Ingredients:
·         ½ kg boneless chicken, cubed
·         3 cloves garlic, minced
·         10 dried red chilies, seeded and soaked in warm water
·         4 tsp oil
·         1½ tsp ginger paste
·         2 tsp minced orange zest
·         3 ½ tbsp peanut oil for stir fry
·         10 small dried hot red chilies(used while frying)
·         1 stalk green onions, for garnishing
Orange Sauce:
·         2 tsp minced ginger
·         2 tsp minced garlic
·         1 green onion, minced
·         2 tsp Chinese rice wine or dry sherry
·         2 tsp white pepper powder
·         ½  tbsp rice vinegar
·         2 ½  tbsp soy sauce
·         Salt to taste
·         1 ½  tbsp hot bean sauce
·         3 tbsp dried orange peel, soaked in hot water for ½  hour and shredded
·         8 tsp sugar or honey
·         1 tsp sesame oil
Preparation:
            Take a bowl and combine all the ingredients for the marinade in it. Mix well and add the chicken. Marinate for about half an hour. Take another bowl and combine all the sauce ingredients in it, stir well, and set aside. Heat the wok over high heat. Add the peanut oil and when it just begins to smoke, add the chilies and marinated chicken. Stir-fry for about 1 minute. Add the sauce and stir-fry for an additional 30 seconds. Remove the chilies before serving. Garnish with chopped green onions. Delicious Orange Chicken is ready.

Chinese Chicken Wings


Ingredients:
·         2 lbs Chicken Wings (trim all excess fats)
·         2 tbsp Sesame oil
·         ¼ cup soy sauce
·         ½ cup pineapple juice (optional)
·         ½ tsp garlic powder
·         ½  tsp ginger powder
·         ½ tsp white pepper
·         2 tbsp brown sugar
·         Salt to taste
Recipe for Chinese Chicken Wings:

Take a bowl and add chicken wings, ginger-garlic powder, brown sugar, pineapple juice, soy sauce, salt and pepper. Mix well. Marinate for 4 hours. Preheat oven at 350 degree F. Place marinated chicken wings in a greased baking tray. Now place baking dish in the preheated oven. Bake at 350 degrees for 50 minutes. Chinese Chicken Wings are ready to serve.

Honey Chili Chicken


Ingredients:
·         4 chicken breasts, thinly sliced
·         5-6 cloves garlic, minced
·         ½  cup corn flour
·         1 tbsp chili sauce
·         2 tbsp soy sauce
·         4-6 whole red chilies
·         1 large lemon, juiced
·         1 tsp black pepper
·         2 tbsp honey
·         1 tbsp vinegar
·         1 tsp sugar
·         Oil for deep fry
green onion, minced for garnishing
Directions:
       Marinate the chicken pieces in a mixture of 1 tbsp soy sauce, salt, egg and 1 tbsp corn flour for 10 minutes. Then fry the chicken in deep hot oil until browned. Remove from oil and dry on kitchen roll. De-stem and break red chilies into two. Grind these along with vinegar in a blender to obtain a paste; keep aside. To make the sauce, put a little oil into the wok and throw the garlic in to flavour the oil. After a minute add all the rest of the ingredients, except corn flour, and bring to the boil. Then mix the corn flour with water and add in the boiling soup. Once thickened, toss the chicken into the sauce and stir until coated. Cook for a further 3 minutes. Chinese Honey Chili Chicken is ready. Garnish and serve with rice.

Egg Drop Soup


Ingredients:
·         3 large eggs, lightly beaten
·         1 tomato, diced
·         2 tbsp corn starch
·         2  cups water
·         4 dashes white pepper
·         2 cups chicken broth
·         2-3 green onions, minced
·         Salt to taste
Preparation:
       Take a bowl and mix the corn starch with half cup of water. Set aside. Bring to boil the chicken broth and 1 ½ cup of water in a pot. Add the tomato, salt and white pepper. Now add the corn starch mixture. The soup will thicken. Cook for 1-2 minutes and remove from heat. Swirl the beaten eggs into the soup and immediately stir around for three times with a pair of chopsticks. Cover the pot with its lid for two minutes. The egg drop soup is ready. Pour it into individual serving bowls, garnish with green onions and serve immediately.
