potatoes with Pickle Spices (Achaari Aalu)

·         1 kg potatoes
·         1 tsp small mustard seeds (raai)
·         2 tsp coriander powder
·         1 tsp cumin seeds
·         1 ½ tsp fennel
·         1 tsp Garam masalah powder
·         1 tsp turmeric powder
·         1 tsp mango powder
·         ½ tsp red chili powder
·         Salt to taste
·         1 tsp ginger paste
·         ½ cup fresh chopped coriander leaves
·         3-4 green chilies, finely chopped
·         3 tbsp Mustard oil (sarsoon ka oil)
            Boil the potatoes and peel them. Cut them into medium sized pieces. Then heat oil in the skillet and add cumin seeds, fenugreek, small mustard seed, fennel, turmeric powder, coriander powder, green chilies, ginger paste, and salt to it and cook for about 30 seconds. Then add boiled potatoes, red chili powder and mango powder. Cook for 4-5 minutes. Then add garam masalah powder and fresh chopped coriander leaves. Take out in the serving bowl and serve.
