Chicken Cacciatore "chicken hunter's style"

·         1 kg chicken, cut into pieces
·         1 onion, diced
·         2 clove garlic, minced
·         ½ cup olive oil
·         1 ½ cup chicken broth
·         2 lemon, juiced
·         1 bunch of parsley
·         3 ribs of celery, diced
·         2 carrots, diced
·         A sprig of rosemerry
·         Salt to taste
·         Pepper to taste
·         2 cups of peeled and chopped tomatoes
        Heat oil in a heavy bottom pan and add chicken in it. Cook for 10 minutes. Now add diced onion, garlic, carrot, celery, rosemery sprig, salt and pepper. Cook stirring for 5-6 minutes and then add chicken broth and lemon juice to the chicken. Cook untill the sauce thickens. Then add the chopped tomatoes. Mix well and cover the pan and simmer on low heat for half an hour. Add the minced parsley and the Chicken Cacciatore is ready.
