Ingredients:

2 medium potatoes, boiled
·
half cup carrots, boiled
·
half cup peas, boiled
·
half cup cauliflower, boiled
·
2 tbsp butter or margarine
·
salt to taste
·
oil for shallow fry
·
2-3 eggs
·
All purpose flour for coating
·
Bread crumbs for coating
Preparation:
Make small
pieces of all the vegetables and put in a food processor or chopper. Add salt
and butter or margarine. After chopping make croquettes in any shape and set
aside. Beat eggs in a bowl. Now coat the croquettes first with egg and then
with flour and crumbs. Fry the croquettes. Delicious lunch box is reedy. Make it
colourful with some fresh vegetables and fruits.
