Brown Rice and Fresh Veggies Salad


Ingredients:
 ·         1 cup brown rice
 ·         1 cup fresh grapes or pear
 ·         2 celery ribs, chopped
 ·         Half cup cucumber, chopped
 ·         ¼ cup red onion, chopped
       Tomato (optional)
 ·         1 tbsp chives, chopped
 ·         ½ cup red pepper, chopped
 ·         1 tbsp olive oil
 ·         2 tbsp lemon juice or apple cider vinegar
 ·         2 cups water
Recipe:
                Bring water to boil with salt. Add rice and return to boil. Reduce heat and cover pot, simmer for 45 minutes. Allow to cool at room temperature. Now take a bowl and place red pepper, celery, red onion, grapes, lemon juice and oil. Stir in brown rice. Brown rice and fresh veggies salad is ready to be served.
