Ingredients:

3 cups water
·
1 ½ tsp pink food colour
·
Grated pistachio
·
2 cups sugar
·
3 green cardamom
·
1 cinnamon stick
·
A pinch of salt
·
½ tsp soda bicarbonate
·
5 cups milk
·
3 cups cold water
·
2 ½ tsp pink tea leaves
·
star anise – petals of Baadian Khataaii
(2 flowers)
Preparation:
Boil water with petals of Baadian Khataaii, cinnamon stick
and green cardamom. Then add tea leaves and let it cook for 30 seconds. Add soda
bicarbonate, food colour and salt. After another 30 seconds remove from heat. Strain, add
1 cup cold water and beat for 5 minutes. Add another cup of cold water and beat
for another 5 minutes. Similarly add the third cup of cold water. Then add milk
and beat for 5 minutes. In the end add sugar and pistachio nuts. Kahmiri tea is
ready. Enjoy!
