Ingredients:

½ kg Mutton

½ kg rice
·
2 fried onions
·
2 tbsp yogurt
·
2 ½ tsp ginger garlic paste
·
Salt to taste
·
2-3 bay leaves
·
4 sticks cinnamon
·
2 tbsp green papaya paste
·
2 tsp cumin seeds
·
8-10 black peppers
·
5-6 green cardamom
·
8-10 green chilies
·

cup fresh coriander leaves
·
2 tbsp oil
·
Fresh mint leaves, chopped
·
3 tsp food colour
·
2 lemon, juiced
Preparation:
Soak
rice for about half an hour. Make a paste of green chilies and fresh coriander
leaves. Cut the mutton into pieces and make small cuts on the pieces. Now place
the mutton in a bowl and add 1/3rd fried onions, 2 tbsp yogurt, ginger
garlic paste, salt, black peppers, cinnamon, green chilies and coriander leaves
paste. Marinate for about 4-5 hours or better overnight. Now heat the oil in a
pan. Add marinated meat and cook for about 4-5 minutes and set aside. Boil water
in a heavy bottom pan. Add cardamom, salt, bay leaves, and cinnamon sticks (1 or 2
sticks). Add rice in it. When half cooked, drain the rice. Now take a heavy
bottom pan and put the meat in it. Level it. Now place the half cooked rice
over the meat. Sprinkle food colour on it. Now add the remaining fried onions
on it, mint leaves, chopped fresh coriander leaves, 3 chopped green chilies and
the lemon juice. Simmer for about 30-40 minutes. The delicious Raw Meat Biryani
is ready.
