Sloppy Joes


Ingredients:

·         2 pound lean ground beef
·         ½ cup chopped green bell pepper
·         1 tsp garlic powder
·         6 tsp brown sugar
·         ½ cup chopped onion
·         1 ½ cup ketchup
·         2 tsp prepared yellow mustard
·         Salt to taste
·         Black pepper to taste

Preparation:
            Take a medium skillet and put it on medium heat. Cook the ground beef, onion, and chopped green pepper in it until they are brown. Then drain off the liquid. Now stir in the garlic powder, mustard, brown sugar, and Ketchup and mix well. Reduce heat, and simmer for about half an hour. Season with salt and pepper. Sloppy Joes are ready. Make a sandwich and enjoy!

Green Rice


Ingredients:
·         3-4 cups cooked rice
·         1 cup chopped coriander leaves
·         1 cup mint leaves
·         2-4 curry leaves
·         2 whole dried red chilies
·         1 ½ tsp peanuts
·         4-5 cloves garlic
·         3-4 green chilies
·         1 ½ tsp ginger paste
·         1 tsp mustard seeds
·         3 tsp lemon juice
·         1 ½  tbsp sesame oil or olive oil
·         Salt to taste
Preparation:
            Put the coriander leaves, mint leaves, ginger, garlic, and green chilies in a blender and make a fine paste of all these ingredients. Add some water if required to make a paste. Now add lemon juice to it and mix well and set aside. Now heat oil in a pan and add mustard seeds to it. Cook for about half a minute at medium heat and then add peanuts, curry leaves and whole red chilies to it. Cook for one minute and then add green paste to it. Cook for 5-10 minutes. Add salt and mix well. Now add cooked rice and again mix well. Green Rice Recipe is ready.

Chicken Parmesan


Ingredients:
·         2 chicken breast pieces
·         2 eggs
·         ½ tsp dried basil
·         1 ½ cup corn flour
·         ¼ cup fresh coriander leaves
·         ½  tsp garlic powder
·         1 cup bread crumbs
·         1/3 cup parmesan
·         Italian blend shredded cheese
·         Salt to taste
·         Black  pepper to taste
(You can also use white pepper)
·         1 cup chili sauce
·         Oil for fry
Preparation:
                Make thin sheets of the chicken breast pieces. Sprinkle salt and pepper over it; flip over it and sprinkle salt and pepper on the other side. Set it aside. Take a bowl and beat eggs in it. Add dried basil and garlic powder to it and mix well. Now in another bowl mix bread crumbs, parmesan and fresh chopped coriander leaves. Now heat oil in a heavy bottom skillet. Now take the breast pieces and first coat with flour and then dip into eggs. Coat again with bread crumbs mixture and place in a plate. Stir fry for 3-4 minutes. Now place all the pieces in the baking tray and place some sauce and shredded cheese on the upper sides of all the pieces.  Preheat oven to 400 degrees and bake for 10 minutes or until the cheese is melted. Now take out from the oven and sprinkle some parmesan and fresh copped coriander leaves over melted cheese. Bake for another ten minutes. Chicken Parmesan is ready. Enjoy!

Apple Pie Bars


Ingredients:
For crust:
·         2 ½ cups all purpose flour
·         1 tsp baking soda
·         1 tbsp sugar, granulated
·         1 cup vegetable shortening
·         2/3 cup milk
·         1 tsp salt
·         2 eggs
For Filling:
·         1 ½ cup crushed corn flakes
·         1 ½ cup sugar, granulated
·         14 apples, peeled, cored and sliced
·         2 tsp cinnamon powder
For Glaze:
·         2 tsp lemon juice
·         1 cup sugar, powdered
Preparation:
Crust:
Preheat oven to 350 degrees F. take a large bowl and combine flour, sugar, salt, and baking soda. Cut-in 1 cup vegetable shortening. Separate the eggs. Place egg yolks in a one cup measuring cup and add milk to the egg yolks until milk and egg yolks equal 2/3 cups. Blend the egg mixture into flour mixture until it reaches a dough consistency. Divide the dough in half. Roll out 1/2 of the dough to fit the bottom of the jelly roll pan. The crust will be very thin.
Filling:
Cover crust with crushed corn flakes. Cover corn flakes with prepared apple slices. In separate bowl, combine sugar and cinnamon. Sprinkle evenly over apple slices. Roll out the remaining dough and cover the apple mixture with it. The dough will be very thin. Beat remaining egg whites until they appear semi-stiff. Brush the crust with the egg whites. Bake for 35 to 40 minutes. Remove from oven.
Glaze:
Take a small bowl and combine powdered sugar and lemon juice for glaze. Blend until smooth. Adjust consistency. Add lemon juice if it is too dry and add powdered sugar if it is too runny. Drizzle glaze over the top of the warm bars. Bars can be served warm or cold, and they freeze well, too. Apple Pie Bars are ready to serve.

Lasagna

Sauce for Lasagna:
·         1 large Onion (finely chopped)
·         2 cloves of Garlic (Lehsan) (minced)
·         2 large cans of Tomatoes (coarsely chopped)
·         1 large can of Tomato Paste
·         1 can of Water
·         1 tbsp. of Oregano
·         1 ½ tbsp. of Basil
·         1 Bay Leaf (Tezz Patta)
·         1 tsp. of Garlic Powder (Lehsan Powder)
·         2 tsp. of Sugar
·         1 ½ tsp. of Salt
·         Black Pepper (Pisi Kaali Mirch) (freshly ground - to taste)
Preparation of sauce:
          Heat the olive oil and cook onions and garlic in it until transparent. Combine remaining ingredients. Simmer several hours until smooth and thick. You may also use readymade sauce (spaghetti sauce).
Ingredients for Filling:
·         16 pieces lasagna noodles, uncooked
·         1 pound ground beef
·         1 tsp salt
·         ½ tsp garlic powder
·         ½ cup water
·         ¼ tsp ground black pepper
·         2 cloves garlic, minced
·         2 tsp olive oil
·         2 tsp chopped basil
·         2 tsp chopped oregano
·         2 eggs
·         ¼ cup grated parmesan cheese
·         2 cups shredded mozzarella cheese
·         16 ounces ricotta cheese
Preparation of Lasagna:
        . Heat olive oil in a skillet. Add garlic, when brown add meat and brown it. Then drain it. Stir in sauce and water; simmer 10 minutes. Cook pasta according to package directions; drain. Lay flat on foil to cool. Heat oven to 350°F. In large bowl, stir together ricotta cheese, 1-1/2 cups mozzarella cheese, Parmesan cheese, eggs, oregano, basil, garlic, salt and pepper. Spread about 1/3 cup meat sauce on bottom of 13 x 9 glass baking dish. Arrange 4 pasta pieces lengthwise over sauce, overlapping edges. Spread one-third cheese mixture over pasta; spread with about 3/4 cup meat sauce. Repeat layers, beginning and ending with pasta. Top with remaining meat sauce; sprinkle with remaining 1/2 cup mozzarella cheese and additional Parmesan cheese, if desired. Cover with foil. Bake 45 minutes or until hot and bubbly. Remove foil; bake about 10 minutes longer, or until lightly browned. Let stand 10 minutes before cutting.

Chicken Cheese Sandwiches


Ingredients:
·         16 slices bread
·         4 teaspoons prepared mustard
·         1 chicken breast
·         8 slices mozzarella cheese
·         1/2 cup finely shredded Cheddar cheese
·         4 pitted ripe olives
·         Salt to taste
·         1 tsp Black pepper
·         1 tsp ajinomoto
·         1 egg
·         2 tbsp all purpose flour
Preparation:
Take a bowl and put chicken in it. Add salt, black pepper, ajinomoto, egg and flour at least for one and half hour. Then deep fry and cut the chicken pieces into thin long strips and set aside. Place 8 slices of bread and spread each slice with mustard; top with chicken slices. Now cut mozzarella cheese. Place on chicken. Sprinkle cheddar cheese also on it. Cut olives and arrange on cheese. Assemble the sandwiches and grill until the bread is golden brown and the cheese has melted. 8 delicious sandwiches are ready.

Mini Chicken Pizza


Ingredients:
·         Half tsp sugar
·         Half cup dry yeast
·         Half cup hot water
·         Half tsp olive oil
·         Salt
·         2 cup all purpose flour
·         1 cup chicken, cut in small cubes
·         1 tbsp butter or margarine
·         1 tomato, chopped
·         Cheese
Preparation:
Dough:
In a small bowl, sprinkle the yeast and sugar on the warm water and stir to dissolve it. Set aside until the yeast starts forming bubbles in about 5 minutes. Sift the flour. Pour the flour into a large bowl or on a work surface. Mold the flour in a mound shape with a hole in the center. Pour the yeast mix in the center and add the olive oil and a pinch of salt. Then mix with your hands to form a dough. Cover the bowl with a kitchen cloth, and set the bowl aside for approximately 1½ – 2 hours until the dough doubles in volume. When the dough is double its original size, punch it down to eliminate the air bubbles.
Pizza:
                Melt 1 tbsp butter or margarine in a pan and add chicken into it. Add some salt also and fry until it is cooked. Take out this chicken and set aside. Again melt some butter or margarine (about 1 tsp) and add chopped tomato in it. Cook it for about half minute and add half cup of water. Cook on medium heat. Add salt and mash to make a sauce.
Come back to the dough and divide it into pieces. Shape pieces of dough into thin round layers. Put the pizzas onto baking tray. Use aluminum foil on baking trays so that the pizza may not stick the tray. Pizzas are ready to receive toppings. Firstly put tomato sauce the put chicken and cheese. Bake for 10 minutes. Mini Chicken Pizzas are ready.

Vegetable Croquettes


Ingredients:
·         2 medium potatoes, boiled
·         half cup carrots, boiled
·         half cup peas, boiled
·         half cup cauliflower, boiled
·         2 tbsp butter or margarine
·         salt to taste
·         oil for shallow fry
·         2-3 eggs
·         All purpose flour for coating
·         Bread crumbs for coating
Preparation:
            Make small pieces of all the vegetables and put in a food processor or chopper. Add salt and butter or margarine. After chopping make croquettes in any shape and set aside. Beat eggs in a bowl. Now coat the croquettes first with egg and then with flour and crumbs. Fry the croquettes. Delicious lunch box is reedy. Make it colourful with some fresh vegetables and fruits.  

Chicken Sandwich


Ingredients:
·         3 cups diced cooked chicken
·         1/2 cup chopped celery
·         1/4 cup mayonnaise
·         1/2 teaspoon curry powder
·         1/2 cup chopped or sliced apple
·         Salt to taste
·         pepper, to taste
Preparation:
Combine chicken and all remaining ingredients; mix gently. Spread chicken sandwich mixture on bread.
It makes about 8 chicken sandwiches.
