Stuffed Bitter Melons (Qeema Bharay Karele)

Ingredients:

·         2 Medium Sized Onion
·         6 Medium Sized Bitter Melons (Karellay)
·         1 Kg Mince Meat
·         ½ Cup Fresh Coriander
·         7-8 Green Chilies
·         Salt to Taste
·         1 tsp Cumin Seeds
·         1 tsp Red Chili Powder
·         ½ tsp Turmeric Powder
·         1 tsp Coriander Powder
·         1 inch Ginger
·         7-8 Cloves Garlic
·         Cooking Oil
Preparation:


Peel the bitter melons, remove the seeds and pour 2-3 tbsp salt onto them. Meanwhile cut the tomatoes into small pieces. Make a fine paste of ginger and garlic. Chop the onion and heat oil in a skillet. Now add the chopped onion to it until nice brown color. Now add the ginger garlic paste, salt, red chili powder, coriander powder, turmeric powder, and cumin seeds to it. Cook for one minute stirring continuously and then add chopped tomatoes to it. Cook for about five minutes and then add mincemeat to it. Cook it for 10-15 minutes or until it gets golden brown color and add the chopped green chilies and chopped coriander leaves. Mix well and remove from the heat. Now squeeze the bitter melons, wash out, rinse water, and fill them with the mincemeat. Wrap a thread around the filled biter melons and fry them in oil on medium heat. Delicious stuffed bitter melons are ready to serve. Enjoy!

Sloppy Joes


Ingredients:

·         2 pound lean ground beef
·         ½ cup chopped green bell pepper
·         1 tsp garlic powder
·         6 tsp brown sugar
·         ½ cup chopped onion
·         1 ½ cup ketchup
·         2 tsp prepared yellow mustard
·         Salt to taste
·         Black pepper to taste

Preparation:
            Take a medium skillet and put it on medium heat. Cook the ground beef, onion, and chopped green pepper in it until they are brown. Then drain off the liquid. Now stir in the garlic powder, mustard, brown sugar, and Ketchup and mix well. Reduce heat, and simmer for about half an hour. Season with salt and pepper. Sloppy Joes are ready. Make a sandwich and enjoy!

Mincemeat with Raw Mango


Ingredients:
·         Half kg Beef mincemeat(Qeema)
·         1 ½ tsp Ginger garlic paste
·         Salt to taste
·         Red chili powder to taste
·         ½ tsp Turmeric powder
·         1 ½ tbsp Oil
·         1 ½  medium sized onion, chopped
·         ½ tsp fenel powder (kalonji)
·         2 cups Raw mango, chopped
·         2 curry leaves
·         ½ cup fresh coriander leaves, chopped
·         ¼ cup mint leaves, chopped(optional)
·         ¼ cup ginger match cut(optional)
Preparation:
        Take a heavy pot and put mincemeat in it. Add ginger garlic paste, salt red chili and turmeric powder in it. Don’t add water or oil in it because mincemeat will leave its own water. Cook on low heat until all the water disappears.  Then increase the heat and add oil, chopped onion and raw mango, Klonji and curry leaves. Cook for about 10 minutes and add ¼ cup coriander leaves and a little mint leaves. Now simmer for 3 minutes. Then take out mincemeat in the serving bowl and garnish with coriander leaves, garlic and mint leaves. Mincemeat with Raw Mango is ready to serve. 

Slow Cooked Brisket


Ingredients:
·         2 pounds beef brisket
·         2 limes, juiced
·         1 can tomatoes
·         1 medium onion, sliced
·         3 tablespoons tomato paste
·         ½ cup beef stock
·         2 cloves garlic
Preparation:
Marinate the beef in the lime juice overnight. Place the brisket in ovenproof dish. Mix together the rest of the ingredients and add them to the brisket. Place in the oven on 275°F for 10 hours (can cook overnight). Remove from oven and serve.
