Stuffed Bitter Melons (Qeema Bharay Karele)

Ingredients:

·         2 Medium Sized Onion
·         6 Medium Sized Bitter Melons (Karellay)
·         1 Kg Mince Meat
·         ½ Cup Fresh Coriander
·         7-8 Green Chilies
·         Salt to Taste
·         1 tsp Cumin Seeds
·         1 tsp Red Chili Powder
·         ½ tsp Turmeric Powder
·         1 tsp Coriander Powder
·         1 inch Ginger
·         7-8 Cloves Garlic
·         Cooking Oil
Preparation:


Peel the bitter melons, remove the seeds and pour 2-3 tbsp salt onto them. Meanwhile cut the tomatoes into small pieces. Make a fine paste of ginger and garlic. Chop the onion and heat oil in a skillet. Now add the chopped onion to it until nice brown color. Now add the ginger garlic paste, salt, red chili powder, coriander powder, turmeric powder, and cumin seeds to it. Cook for one minute stirring continuously and then add chopped tomatoes to it. Cook for about five minutes and then add mincemeat to it. Cook it for 10-15 minutes or until it gets golden brown color and add the chopped green chilies and chopped coriander leaves. Mix well and remove from the heat. Now squeeze the bitter melons, wash out, rinse water, and fill them with the mincemeat. Wrap a thread around the filled biter melons and fry them in oil on medium heat. Delicious stuffed bitter melons are ready to serve. Enjoy!

Healthy Chicken Burger Recipe

Ingredients:

·         ½ kg Chicken Breast pieces
·         1 cup chicken fat
·         Half cup mayonnaise or cream or one egg
·         Garam masala powder to taste
·         Salt to taste
·         1 tsp chopped garlic
·         2 tsp lime juice
·         Half cup chopped fresh coriander leaves
·         Black pepper powder to taste
·         1 tsp Red chili flakes
·         3 burger breads
·         2 tomatoes
·         1 tbsp tomato ketchup/chili sauce
·         One cup bread crumbs

Preparation:

Cut the chicken into small cubes. Add chicken fat to it. If chicken fat is not available, you may add half cup cream to it as well. Put the chicken along with chicken fat into a blender and make fine chicken mince of it. Now add the mayonnaise or cream into it to make the burger juicy. Now add salt, pepper, red chili flacks, garlic, garam masala powder, chopped coriander leaves, and lime juice to it. Mix well and shape it into medium sized burger petties. Coat these petties with bread crumbs and fry them on medium heat into oil or butter. Now take the burger bread, toast them, and make burger using tomato ketchup, salad leaves, tomato slices, and mayonnaise. Delicious and healthy chicken burgers are ready. Enjoy!

Crispy Chicken Cutlets

Ingredients

·         ½ kg grilled chicken
·         One onion, chopped
·         One tsp chopped garlic
·         ½ tsp red chili flakes
·         ¼ cup chopped coriander leaves
·         Salt to taste
·         1 tsp garam masala powder
·         2-3 potatoes
·         3 eggs
·         One cup plain flour
·         One cup bread crumb
·         Oil for frying
Preparation

Take a bowl and put into it chopped onion, garlic, chili flakes, garam masala powder, chopped fresh coriander leaves and salt. Mix all the ingriedients well. Now boil the potatoes and mash them. Add the potatoes to the bowl and mix with other ingredients. Add an egg to the mixture and mix well. Now take the grilled chicken and crush it or chop it into very small pieces. Add the chicken to the mixture and mix well. Add some bread crumbs to it if needed, to achieve the desired consistency of the mixture. Now make the cutlets in any shape you want and the cutlets are ready to be fried. The proper way to coat the chicken cutlets is to dip them first in all purpose flour, then into the beaten egg, and lastly in the bread crumbs. Now fry them into oil. Crispy Chicken Cutlets are ready.
